A smooth extra jam with large pieces of strawberry. Brown sugar is added in measured quantities to sweeten without covering the natural flavour of the fruit. The dark red colour is due entirely to the concentration of strawberries. The best way to savour the jam is simply on bread, in plain yoghurt, or as filling for crêpes or tarts.
